For vines to be planted in the grounds of “La Cantina tra gli Ulivi” we selected clones and rootstocks from France, looking for the best quality performance possible: the clusters small and loosely packed them to be able to also better resist to diseases of the vine.
The quality in the vineyard, passes above all by its preservation. For this reason, we never made the use of chemical fertilizers, in the respect and defence of nature, using only natural organic and certified fertilizers. In the same way, the tractor, the hoe and hands, you are our only tools: we have never used herbicides, or desiccants.
We believe that our earth even before the vine, is the essential element to produce wines that are healthy and of high quality. We provide green manure. We do not carry out work between the rows, in order not to disturb the activity of bacteria, fungi and insects naturally present in the soil.
We personally hand all of the management tasks of the foliage of the vines, because we think that no machine can guarantee the same level of work. For pruning, we follow the revolutionary method simonit&sirch, which allows the vine plant to grow not only vertically, but also horizontally, giving the vines a particular character and feature.
The treatments are carried out following the principles of integrated pest management, which involve the use of products with low environmental impact, and only when necessary. The grapes are constantly monitored, and sparse to maintain high levels of quality.

Our vineyards are located in Cortona, in the locality of Fratta (Arezzo), in a land with a strong wine vocation. The philosophy of the cellar, between olive trees, fits in the tradition of this land, each day loved and respected, to produce wines of quality, healthy.
