The grapes are hand-harvested, and placing it in small boxes, which is followed by a destemming-soft pressing and maceration on the skins for about 3 weeks.
At the end the following pressing equally soft and the wine is introduced, by gravity, into steel tanks until the end of malolactic fermentation.
Subsequently, a part of the wine is destined for ageing in oak barrels of small capacity, mainly barriques of 225 lt, for at least a year. Following the bottling, to preserve the original characteristics of the fruit, it is lightly filtered and capped with the corks of the best quality available on the market.
Color: intense ruby red, with violet reflections.
Perfume: intense fruity of red fruits mixed with intense spicy sensations. Fruity notes of blueberries, plums, black olives and cherry blended with sensations of vanilla, black pepper, milk chocolate, tobacco and aniseed.
Taste: smooth, sweet, fruity, medium volume, and soft. Fruity and spicy merged in a long aftertaste in which they arise and more intense, the sensations of liquorice, anise and black pepper.
The high alcohol content and softness typical of the grape, balanced by the tannins and the richness in polyphenols makes “De’Conti” well suited to be served with foods rich in flavours and spices such as: appetizers, canapes, pasta with tomato sauce, red meat, game such as venison or wild boar, but also white meats, poultry, turkey and duck.
